Ingredients

Brownie Bites

  • 1 1/2 cups almond flour
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup milk of choice
  • 1/2 cup cocoa powder
  • 1/4 cup tahini (sesame seed paste) or your favorite nut butter
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Chocolate Ganache Filling

  • 1/2 cup chocolate chips
  • 1/4 cup milk of choice

Instructions

  • Line a muffin tin with 8 paper liners or use a silicon muffin pan.
Add all ingredients to the food processor and process until well combined into a dough.
Divide the batter into eight segments. Roll into balls and insert each into a cupcake pan.
Press each ball with a small measuring cup or the handle of a wooden spoon to create a well for the ganache filling to sit.

Chocolate Ganache Filling

  • Place chocolate chips in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips.
Add the milk and stir until thick and creamy.
Pour 1 teaspoon into each brownie bite well (the indent you made to hold the filling).
Refrigerate for 15 minutes and serve.
Store in the fridge for up to 1 week or freezer for up to 3 months.
