Date Peanut Butter Protein Bark

Ingredients

  • 16-18 Medjool dates, pitted
  • 1/2 cup natural peanut butter
  • 1 scoop vanilla or chocolate protein powder
  • 1 teaspoon vanilla extract (optional)
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil

Optional Toppings

  • Flaky sea salt
  • Chopped peanuts
  • Cacao nibs

Instructions

  • Line a small baking tray with parchment paper.
    Split dates open and arrange them closely together on the tray, cut side up in a rectangle shape. Press dates firmly together to create a flat, connected base.
    In a bowl, mix peanut butter with protein powder and vanilla until smooth.
    Spread the protein peanut butter evenly over the date layer.
    Melt the chocolate next.
    Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour or spread chocolate over the peanut butter layer.
    Sprinkle with sea salt or toppings if using.
    Refrigerate or freeze for 30–45 minutes until firm.
    Break or cut into 10-12 (more or less) bark-style pieces and store chilled.
    Keep in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
