Ingredients

  • 2 large bananas, sliced, frozen
  • 4 dates, roughly chopped
  • 1 scoop vanilla protein powder
  • 1/4 cup Greek yogurt (or dairy-free yogurt)
  • 2 tablespoons milk of choice, plus more if needed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 cup chopped walnuts or pecans

  • Chopped dates
  • Cinnamon sprinkle
  • Coconut flakes
  • Cacao nibs
  • Drizzle of almond butter or peanut butter

Instructions

  • If your dates are dried and hard, soak them in warm water for 10 minutes, then drain well and roughly chop.
    Add the frozen bananas, protein powder, yogurt, milk, vanilla and cinnamon to a high-speed blender or food processor.
    Blend until thick and creamy, stopping occasionally to scrape down the sides.
    Add a little extra milk only if needed to help blending.
    Once smooth and creamy, stir in the chopped dates and walnuts or pecans.
    Spoon into bowls and add your favorite toppings.
    Serve immediately for a soft-serve consistency, or freeze for 30-60 minutes for a firmer ice cream texture.

    For the creamiest texture, use very ripe bananas before freezing them.
    Soak your dates in warm water for 10 minutes if they are firm. This helps them blend more easily and creates a smoother final texture.
    Toast your nuts before adding them for even more flavor.
    Pecans provide the most "caramel pecan" flavor, while walnuts add a deeper nutty taste.
    Less liquid creates thicker nice cream. Add only what you need to get things blending.
    For extra protein, add an additional half scoop of protein powder.
    Store leftovers in the freezer and allow to soften for 10-15 minutes before serving.
