Ingredients
1cupMedjool dates, pitted
3/4cupraw almonds or cashews
1/2cupchocolate or vanilla protein powder
1/4cupcocoa powder or cacao powder
1tablespooncoconut oil, melted
1teaspoonvanilla extract
Pinch of sea salt
1/4cupfreeze-dried raspberries, lightly crushed
Chocolate Coating
1/2cupdark chocolate chips
1tablespooncoconut oil
1tablespoonfreeze-dried raspberries
Instructions
If your dates are firm, soak them in warm water for 5–10 minutes, then drain well.Add dates, almonds, cocoa powder, protein powder, coconut oil, vanilla extract and salt to a food processor and blend into a smooth dough. Add crushed freeze-dried raspberries and pulse a couple of times to combine or fold in by hand.Roll mixture into 8-10 balls (more or less depending on preferred size) between the palm of your hands.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Working quickly, using two forks, dip one ball at a time into the bowl of melted chocolate until it is fully coated. Lift the ball from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining balls.Sprinkle the freeze-dried raspberries on the top before the chocolate hardens.Chill in the fridge for at least 30 minutes to firm up.Store in an airtight container in the fridge for up to 7 daysFreeze for up to 2 months.
