Instructions
Line a baking tray or large plate with parchment paper.Roughly chop the nuts. Keep some pieces fairly chunky so the clusters have plenty of crunch.Melt the dark chocolate gently in a heat proof bowl over a saucepan of simmering water, or microwave in short intervals, stirring between each.Remove from the heat and stir in the protein powder until completely smooth.Add the chopped nuts, coconut, cacao nibs if using, coconut oil, vanilla, chili powder and sea salt.Stir gently until everything is thoroughly coated in chocolate.Spoon the mixture onto the prepared tray, creating approximately 10–12 small clusters.Top with your chosen toppings.Refrigerate for 1–2 hours, or until the chocolate has completely set.Store chilled and enjoy whenever you need a delicious chocolate fix.Blended Bites Tips 💡Start gently with the chili: The heat becomes more noticeable as the clusters set, so begin with a small amount.Use your favourite nuts: Almonds and cashews create lovely combination, while pecans and walnuts give a softer, richer texture. For extra protein: You can add another ½ scoop of protein powder, but you may need an extra teaspoon or two of coconut oil to keep the chocolate mixture smooth.Store the clusters in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months.
