Creamy Lime Chia Protein Pudding

Chia pudding is a delicious option for anyone looking for a healthy, nutritious and filling breakfast. It is made by mixing Chia Seeds with flavours add milk then chill. Serve it alone or topped with fresh berries or nuts.

Ingredients

Chia Pudding

  • 1/2 cup coconut milk
  • 2 tablespoons chia seeds
  • 1 scoop vanilla protein powder
  • 1 lime, juice and zest
  • 1/2 tablespoon honey or maple syrup

Lime Pudding Layer

  • 1/2 cup cashew nuts
  • 1/2 cup coconut milk
  • 1/2 cup avocado mashed
  • 1-2 limes, juice and zest (depending on how lime-y you prefer)
  • 1/2 tablespoon honey or maple syrup

Green Colour

  • For a subtle green colour use 1/4-1/2 tsp matcha powder. Or if you wish to make your own natural green food colouring - cook tender, greens (such as spinach) in a tiny bit of water for about a minute then drain. Puree the greens with just enough water to liquefy them, you will get a very concentrated green.

Toppings

  • Lime zest
  • Chopped nuts or seeds
  • Coconut shreds

Instructions

Chia Pudding

  • Place all of the chia pudding ingredients into a bowl and stir fast with a fork for 1 minute.
    The chia seeds should to start to thicken up with the liquids whilst you stir. Leave in the fridge for a total of 30 minutes.

Lime Pudding Layer

  • Place the lime pudding ingredients in a blender and blend until smooth.
    Once your chia pudding has had time to set in the fridge, smooth the chia pudding layer evenly into a glass and then layer the lime pudding mixture on top. Place in the fridge for 1-2 hours to set.
    For the final touch, grate lime zest on top of the pudding.
