Cottage Cheese Brownie Protein Bites

Ingredients

  • 1 cup cottage cheese
  • 3/4 cup oat flour (rolled oats blended to a flour)
  • 2 tablespoons cocoa powder
  • 2-3 tablespoon honey or maple syrup (to taste)
  • 1 scoop chocolate or vanilla protein powder
  • 1/4 cup mini dark chocolate chips (optional)
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Add cottage cheese, cocoa powder, honey, vanilla, and salt to a blender or food processor. Blend until completely smooth.
    Transfer mixture to a bowl and stir in protein powder and oat flour until a thick dough forms.
    Fold in chocolate chips if using.
    Roll into 10-12 bite-sized balls and place on a lined tray.
    Chill in the fridge for at least 30 minutes to firm up.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted drizzle over the balls and place back in fridge to set before serving.
    Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.
