Ingredients
1cupcottage cheese
3/4cupoat flour (rolled oats blended to a flour)
2tablespoonscocoa powder
2-3tablespoonhoney or maple syrup (to taste)
1scoopchocolate or vanilla protein powder
1/4cupmini dark chocolate chips (optional)
1teaspoonvanilla extract
Chocolate Topping
1/2cupchocolate chips
1teaspooncoconut oil
Instructions
Add cottage cheese, cocoa powder, honey, vanilla, and salt to a blender or food processor. Blend until completely smooth.Transfer mixture to a bowl and stir in protein powder and oat flour until a thick dough forms.Fold in chocolate chips if using.Roll into 10-12 bite-sized balls and place on a lined tray.Chill in the fridge for at least 30 minutes to firm up.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted drizzle over the balls and place back in fridge to set before serving.Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.
