Cosmic Brownie Protein Cups: Nostalgia Made Easy

These homemade cosmic brownie protein cups are fudgy, rich, and topped with chocolate ganache and colourful sprinkles. A better-than-store-bought dessert! Every chocoholic’s dream come true – and like me you will want to make them over and over (and over) again. Made with just a handful of good-for-you ingredients, they taste like a rich, fudgy brownie that will melt in your mouth!

Ingredients

Brownie Protein Dough

  • 1/2 cup oat flour (oats blended to a flour)
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons peanut (or any other nut or seed) butter
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon cocoa powder
  • 1-2 tablespoons any milk as needed

Chocolate Ganache Topping

  • 1/4 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1 tablespoon peanut (or any other nut or seed) butter
  • 2 tablspoons sprinkles

Instructions

  • Line a muffin pan with 6 parchment paper liners or use a silicon muffin pan.
    In a medium bowl add oat flour, protein powder, nut butter, honey, cocoa powder and stir until no cocoa clumps remain (microwaving for 10 seconds can help loosen up your nut butter).
    Add protein powder and milk 1 teaspoon at a time, stirring to combine into a non-sticky bar dough. How much milk you need will depend on your nut butter and protein powder.
    Press the bar dough into your muffin pan liners.  

Chocolate Ganache Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, add in the nut butter and stir to combine.
    Spread the chocolate coating top of the brownie dough evenly.
    Sprinkle with sprinkles. Freeze or refrigerate 20-30 min to set.
    If frozen, thaw a few minutes before enjoying.
    Store in the fridge 1 week or freezer for up to 3 months.
