Cosmic Brownie Protein Bars (No Bake)

Ingredients

Fudgy Brownie Base

  • 1 1/2 cups almond flour
  • 1/2 cup chocolate protein powder
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut oil or butter, melted
  • 2-3 tablespoons milk of choice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Frosting

  • 1 cup dark or semi-sweet chocolate chips
  • 1/2 cup Greek yogurt or coconut cream
  • 1-2 tablespoons maple syrup or honey (optional, to taste)

Topping

  • Rainbow candy-coated chocolate sprinkles

Instructions

  • Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or can make in a parchment paper lined muffin pan, silicon muffin pan or silicon bar mold.
    In a medium bowl, mix almond flour, protein powder, cocoa powder and salt until well combined.
    Add maple syrup, melted coconut oil, milk, and vanilla extract. Stir until a thick, fudgy dough forms.
    Press the mixture evenly into the prepared pan, smoothing the top firmly. Place in the fridge while making the frosting.  

Chocolate Frosting

  • Place chocolate chips in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Stir Greek yogurt (or coconut cream) into the melted chocolate until glossy and creamy.
    Spread the frosting evenly over the chilled brownie base.
    Sprinkle generously with rainbow candy-coated chocolate sprinkles.
    Refrigerate for 1–2 hours, or until fully set.
    Slice into 12 bars or more smaller squares and store bars in an airtight container in the fridge for up to 1 week or freezer for up to 3 months. Let frozen bars sit for a few minutes before eating for the best texture.
