Ingredients

  • 1 cup oat flour (oats blended to a flour)
  • 1/2 cup vanilla protein powder
  • 1/4 cup cashew butter or almond butter
  • 3 tablespoons maple syrup or honey
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 2-4 tablespoons any milk
  • 1/4 cup chocolate chips

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a bowl, combine oat flour, protein powder, and sea salt.
    Stir in cashew butter, maple syrup, melted coconut oil, and vanilla extract.
    Add almond milk gradually until the mixture forms a soft cookie dough texture.
    Fold through chocolate chips.
    Press the mixture into the lined pan evenly.
    Refrigerate for at least 1 hour until firm.
    Cut into 8-10 bars or squares and enjoy.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
