Coconut-Vanilla Jello Cubes

A simple vanilla flavored jello that creates a sweet, dessert-like indulgence rich in healthy fats from the coconut milk and naturally sweetened with vanilla and honey
 But it’s the protein-rich gelatin that supercharges this recipe as its so amazing for your hair, skin, nails, joints, and muscle and also incredible for healing the gut lining.
 It’s such a great healthy snack to have on hand when you want a sweet treat and even makes a good dessert. All you need is 5 simple ingredients and you can make these low carb, high protein jello squares.

Ingredients

  • 1 14.5oz can coconut milk or cream
  • 2 tablespoons gelatin
  • 1/4 cup water
  • 1.4 cup hot water
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon vanilla extract

Instructions

  • Sprinkle gelatin of top of water for about a minute to soften. Add hot water and stir well to dissolve.
  • Pour coconut milk into a medium saucepan. Heat on medium to boiling.
    Add gelatin water to saucepan.
  • Remove from heat, stir in sweetener and vanilla extract.
    Pour into an 8x8-inch baking dish. Refrigerate until set.
    Cut into squares or small cubes.
