Coconut Protein Fat Bombs

Ingredients

  • 1/2 cup coconut butter, softened (see below)
  • 1/4 cup coconut oil, melted
  • 1 cup desiccated coconut
  • 1 scoop vanilla protein powder
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional Coatings

  • Dark chocolate drizzle
  • Extra shredded coconut
  • Crushed freeze-dried berries

Instructions

  • If your coconut butter is solid, place jar in warm water for a few minutes or give it a couple of bursts in the microwave.
    In a mixing bowl, combine coconut butter, melted coconut oil, maple syrup, vanilla extract and salt.
    Stir in the protein powder until smooth.
    Add shredded coconut and mix until a thick dough forms.
    Place the mixture in the refrigerator for 20–30 minutes to firm up slightly.
    Roll into 10-12 bite-sized balls using your hands.
    Coat in extra shredded coconut if desired or drizzle with melted dark chocolate.
    Refrigerate for another 30 minutes until firm.
    Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.
