Coconut Oat Protein Rounds

Protein rounds are a perfect snack for pretty much anyone but especially for those who lead a busy lifestyle or love to refuel as soon as possible after a workout. This simple one-bowl, no-bake recipe for coconut, oat protein rounds is a great way to get a healthy, grab-and-go snack into your life!

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut (or any nut or seed) butter
  • 1/2 cup desiccated coconut
  • 2 scoops protein or collagen peptides powder - vanilla or unflavored
  • 2-4 tablespoons any milk
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

  • 1/2 cup coconut butter store bought or recipe link below in notes

Instructions

  • If you are going to make your own coconut butter make this first so its ready to go when you make the protein rounds. Recipe link below in notes.
    In a medium bowl, combine rolled oats, coconut and protein powder.
    In a small microwave-safe bowl, gently warm peanut butter, honey and vanilla extract until smooth with 15 second microwave bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour the peanut butter mixture over the dry ingredients and mix until fully combined. Taste test and add more honey or vanilla if you think it needs it.
    If the mixture seems a bit dry, add the milk a tablespoon at a time until the dough comes together. You want it to stick together when pinched between your fingers.
    Roll the mixture into 6-8 small rounds (depending on your preferred size) using your hands.

Coconut Butter Drizzle

  • Warm the coconut butter by immersing the jar in warm water for a few minutes or a burst or two of 15 seconds in the microwave to soften and melt it.
    Drizzle over the mounds with a spoon, then place on a lined tray and refrigerate for at least 30 minutes to set.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
