Instructions
Add the Greek yogurt and cottage cheese or cream cheese to a blender or food processor. Blend until completely smooth.Add the protein powder, shredded coconut, maple syrup or honey, vanilla and salt. Blend again until thick and creamy. If the mixture is too thick to blend, add milk a little at a time until it reaches a light, fluffy consistency.Stir through the chopped macadamia nuts, or pulse briefly if you prefer them more finely distributed.Spoon into individual serving glasses or bowls. Chill for 30–60 minutes if you would like a firmer texture.Finish with toasted coconut, fresh fruit and extra macadamias before serving.NotesCottage cheese or cream cheese: Cottage cheese gives a lighter, protein-rich base. Cream cheese creates a richer, more dessert-like flavour.Protein powder: Different brands absorb liquid differently. Adjust with a little milk if needed.Dairy-free: Use thick coconut yogurt, dairy-free cream cheese and a plant-based protein powder.Storage: Cover and refrigerate for up to 2 days. Stir gently before serving if the mixture settles.Texture: This is a chilled fluff, not a baked or frozen dessert. For the best creamy texture, serve cold from the refrigerator.Nutrition: Protein and carbohydrate amounts will vary depending on the yogurt, cheese, protein powder and sweetener used.
