Coconut Lime Protein Fudge Bites

This delicious lime fudge recipe is a satisfying plant-based treat and way healthier than traditional fudge. Its smooth and creamy and doesn't contain any refined sugar, dairy or butter.

Ingredients

  • 2 cups cashews, soaked 3+ hours and drained
  • 1 cup desiccated coconut
  • 1/2 cup protein or collagen powder
  • 1/4 cup coconut oil - melted
  • 1/4 cup honey or maple syrup
  • 2-3 limes, juice and zest, depending on how lime-y you prefer
  • Few drops natural green food colouring or make your own – cook tender, greens (such as spinach) in a tiny bit of water for about a minute. A few drops of the juice will give a very concentrated green.

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place all ingredients in a food processor and process until you reach a sticky dough consistency.
    Spread the mixture into the lined pan and spread out evenly.
    Put into the freezer for at least 2-3 hours or overnight.
    Using a sharp knife, cut into 20 or more small squares and store them back in the freezer in an airtight container for 10 days or more. Take them out when you need something sweet (if too hard, let warm up few minutes).
