Coconut Lemon Protein Macaroons

Ingredients

  • 1 1/4 cups desiccated coconut
  • 1 cup coconut butter, store bought or healthy homemade recipe below in notes
  • 1/4 cup almond flour
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1 lemon, juice and zest
  • 1 teaspoon vanilla extract

Instructions

  • Line a baking sheet with parchment paper or wax paper. Set aside for later.
    Add coconut butter to a small saucepan and gently warm over low heat until melted. Add coconut, almond flour, protein powder, honey and vanilla extract and mix until well combined into a sticky dough like mixture.
    Taste test and add more honey, lemon or vanilla extract if you think its needed.
    Using a cookie scoop, scoop firmly packed balls of coconut mixture, 14-16 depending on your size preference.  Drop on to the prepared baking sheet, making sure to space balls evenly apart.
    Place baking sheet into the freezer for 10-15 minutes, or until cookies are firm.
    Store in fridge for up to 2 weeks or freezer for up to 3 months. Allow to thaw for 10-15 minutes before enjoying.
