Berry Bliss Ball Mixture
1cupraw almonds or cashews
1cupsoft Medjool dates, pitted
2scoopsvanilla protein powder
1/2cupfreeze-dried raspberries or strawberries
1teaspoonvanilla extract
1tablespooncoconut oil (optional, for a softer texture)
Pinch of sea salt
Coconut Filling
1/2cupcoconut butter, softened (store bought or homemade recipe below in notes)
1/4cupdesiccated coconut
1tablespoonmaple syrup or honey
1/2teaspoonvanilla extract

Desiccated coconut
Crushed freeze-dried berries
Finely chopped pistachios

Instructions
Soften the coconut butter by placing the jar in warm water for a few minutes or give it a couple of bursts in the microwave.In a small bowl, mix together the coconut butter, desiccated coconut, maple syrup and vanilla until smooth. Place in the freezer for 15–20 minutes until firm enough to scoop.Add the almonds or cashews to a food processor and process until finely chopped.Add the dates, protein powder, freeze-dried berries, vanilla, coconut oil (if using), and sea salt. Blend until the mixture comes together into a sticky dough.Scoop about 2 tablespoons of the berry mixture and flatten it in your palm.Place about 1 teaspoon of the chilled coconut filling in the centre.Carefully wrap the berry mixture around the filling and roll into a smooth ball.Roll each bliss ball in shredded coconut, crushed freeze-dried berries, or chopped pistachios if desired.Refrigerate for at least 30 minutes before serving.Store in an airtight container for up to 1 week in the fridge or freeze for up to 2 months.
