1 1/2cupsraw cashews, soaked 3+ hours and drained
1cupsoft dates, (if your dates are hard, soak 10 minutes in warm water and drain)
3/4cupdesiccated coconut, plus extra for rolling
1/4cupcocoa powder
1scoopvanilla or chocolate protein powder
1tablespooncoconut oil, melted
1teaspoonvanilla extract
Pinch of sea salt
1-2tablespoonswater, if needed
Optional Add-Ins
2tablespoonscacao nibs
1/4teaspooncinnamon
1teaspoonorange zest
2tablespoonsmini dark chocolate chips
Instructions
Add the cashews to a food processor and process until finely chopped.Add the dates, shredded coconut, cocoa powder, protein powder, coconut oil, vanilla and sea salt.Process until the mixture comes together into a sticky dough.If the mixture is too dry, add water one tablespoon at a time until it holds together when pressed.Scoop out tablespoon-sized portions and roll into 18-20 balls.Roll each ball in extra shredded coconut to coat.Refrigerate for at least 30 minutes to firm up before serving.Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months. Thaw for 5–10 minutes before enjoying.Â
