Coconut Date Protein Balls

Ingredients

  • 1 1/2 cups raw cashews, soaked 3+ hours and drained
  • 1 cup soft dates, (if your dates are hard, soak 10 minutes in warm water and drain)
  • 3/4 cup desiccated coconut, plus extra for rolling
  • 1/4 cup cocoa powder
  • 1 scoop vanilla or chocolate protein powder
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1-2 tablespoons water, if needed

Optional Add-Ins

  • 2 tablespoons cacao nibs
  • 1/4 teaspoon cinnamon
  • 1 teaspoon orange zest
  • 2 tablespoons mini dark chocolate chips

Instructions

  • Add the cashews to a food processor and process until finely chopped.
    Add the dates, shredded coconut, cocoa powder, protein powder, coconut oil, vanilla and sea salt.
    Process until the mixture comes together into a sticky dough.
    If the mixture is too dry, add water one tablespoon at a time until it holds together when pressed.
    Scoop out tablespoon-sized portions and roll into 18-20 balls.
    Roll each ball in extra shredded coconut to coat.
    Refrigerate for at least 30 minutes to firm up before serving.
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
    Thaw for 5–10 minutes before enjoying.
