Coconut Cashew Protein Bites

Ingredients

  • 1 1/2 cups cashews, soaked 3+ hours and drained
  • 1 cup dates, soaked 30 minutes and drained
  • 3/4 cup desiccated coconut, plus extra for rolling
  • 1/2 cup vanilla or unflavoured protein powder
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk of choice (as needed for blending)

Optional Add-Ins

  • White chocolate chips
  • Lemon zest
  • Hemp or chia seeds

Instructions

  • Add cashews to a food processor and pulse until finely crumbed. Add coconut, dates, protein powder, maple syrup, melted coconut oil and vanilla. Blend until the mixture begins to come together.  
    Add milk one tablespoon at a time until a soft, slightly sticky dough forms.
    Scoop small portions and roll into 12-14 bite-sized balls (more or less).
    Roll each bite in extra shredded coconut for a soft outer layer.
    Place in the fridge for 20–30 minutes or freezer for 10–15 minutes until firm.
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
    Enjoy chilled for the best texture.
    Easy Variations
    Chocolate Coconut: Add 1tablespoon cocoa powder
    Lemon Coconut: Add lemon zest and use vanilla protein powder
    Almond Joy Style: Mix in chopped almonds and dark chocolate chips
