1cupcashews, soaked 3+hours and drained
3/4cupdesiccated coconut (plus extra for rolling)
1/2cupdates, soaked 30 minutes and drained
1/2cuppineapple, dried
1/2cupvanilla or unflavoured protein powder
1tablespooncoconut oil
1/2teaspoonvanilla extract
Instructions
Add cashews, pineapple, desiccated coconut, dates, protein powder, coconut oil, and vanilla extract to a food processor. Pulse a few times until the mixture is combined into a thick, sticky dough.
