Chocolate Walnut Protein Bites

Chocolate Walnut Protein Bites are fudgy, no-bake treats made with wholesome walnuts, rolled oats, dates, cocoa powder and protein powder. Naturally sweetened and packed with chocolate flavour, these easy energy bites are perfect for meal prep, afternoon cravings, post-workout snacking, or a healthy little dessert. 🍫🌰

Ingredients

  • 1 cup walnuts
  • 1 cup rolled oats
  • 1 cup soft dates, (if dried and hard, soak for 10 minutes in warm water then drain)
  • 1/3 cup chocolate protein powder
  • 1/4 cup cocoa powder
  • 1/4 cup natural peanut butter or almond butter
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk of choice, as needed
  • Pinch of sea salt

Instructions

  • Add the walnuts, oats and dates to a food processor. Pulse several times until they are finely chopped but still have a little texture.
    Note: Don't over-process into a nut butter.
    Add the chocolate protein powder, cocoa powder, nut butter, vanilla extract and sea salt.
    Pulse a few times until the mixture starts to come together.
    If it seems too dry or crumbly, add milk one tablespoon at a time until you have a soft mixture that holds together when pressed.
    Scoop out approximately one tablespoon of mixture and roll between your palms to form a ball.
    Continue until all the mixture has been used. You should get approximately 12–16 bites depending on size.
    Place the bites in the refrigerator for at least 30 minutes to firm up.
    Enjoy straight from the fridge or let them sit for a few minutes for a softer texture.
    Store in an airtight container in the refrigerator for up to one week or freeze for up to two months.
    Tips & Variations
    Make them extra chocolatey: Add a handful of mini dark chocolate chips to the mixture. Or drizzle with melted dark or white chocolate.
    Add coconut: Mix in ¼ cup shredded coconut for a delicious chocolate-coconut version.
    Try different nuts: Pecans or almonds work beautifully in place of walnuts.
    Add a little crunch: Roll the finished bites in finely chopped walnuts or cacao nibs.
    Want more sweetness? Add a tablespoon of maple syrup or honey to taste.
