1cupdark chocolate chips
1tablespooncoconut oil
Strawberry Coconut Protein Filling
1/2cupcoconut butter – store bought or recipe link for homemade below in notes
2tablespoonsfreeze-dried strawberry powder or crushed freeze-dried strawberries
2tablespoonsvanilla protein powder
1-2tablespoonsmaple syrup (to taste)
1/2teaspoonvanilla extract
Pinch sea salt
1-2teaspoonsalmond milk (if needed for texture)
Instructions
Place 10-12 mini muffin liners in a muffin tray.Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Spoon about 1–2 teaspoons of melted chocolate into each liner. Tilt to coat the base slightly up the sides to make a little cup for the filling to sit in.Place in freezer for 10 minutes to set.
Strawberry Coconut Filling
To soften coconut butter place the jar in a warm water bath for a few minutes.Stir together coconut butter, strawberry powder, protein powder, maple syrup, vanilla, and sea salt until smooth.If the mixture feels too thick, add a teaspoon of almond milk at a time until creamy but firm.Spoon a small amount of the strawberry coconut mixture onto each chocolate base.
