Chocolate Strawberry Protein Cups.

Ingredients

Chocolate Shell

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Strawberry Coconut Protein Filling

  • 1/2 cup coconut butter – store bought or recipe link for homemade below in notes
  • 2 tablespoons freeze-dried strawberry powder or crushed freeze-dried strawberries
  • 2 tablespoons vanilla protein powder
  • 1-2 tablespoons maple syrup (to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch sea salt
  • 1-2 teaspoons almond milk (if needed for texture)

Instructions

  • Place 10-12 mini muffin liners in a muffin tray.
    Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Spoon about 1–2 teaspoons of melted chocolate into each liner. Tilt to coat the base slightly up the sides to make a little cup for the filling to sit in.
    Place in freezer for 10 minutes to set.

Strawberry Coconut Filling

  • To soften coconut butter place the jar in a warm water bath for a few minutes.
    Stir together coconut butter, strawberry powder, protein powder, maple syrup, vanilla, and sea salt until smooth.
    If the mixture feels too thick, add a teaspoon of almond milk at a time until creamy but firm.
    Spoon a small amount of the strawberry coconut mixture onto each chocolate base. Flatten gently.
    Cover each cup with remaining melted chocolate.
    Refrigerate or freeze until fully firm.
    Store in fridge or freezer and peel the liner off before eating.
