Chocolate Strawberry Frozen Yogurt Protein Bark

This chocolate strawberry frozen yogurt bark is sweetened with honey and mixed with cocoa to create a deliciously crunchy bark topped with strawberries and drizzled with chocolate. Delish!

Ingredients

  • 2 cups thick Greek-style yogurt
  • 1 cup strawberries, fresh or frozen, sliced
  • 2 scoops protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract

Chocolate Sauce Drizzle

  • 1 cup chocolate chips
  • 1 tablespoon peanut (or any nut or seed) butter
  • 1 tablespoon coconut oil

Instructions

  • Line a baking sheet with parchment paper and set aside.
    In a medium bowl, combine together the Greek yogurt, protein powder, honey, and cocoa powder. Mix until the cocoa powder is completely incorporated.
    Pour the yogurt mixture over the parchment paper and spread the mixture evenly across the baking sheet in a rectangle shape until the Greek yogurt is about ¼- ½ inch thick.
    Spread the sliced strawberries and any other toppings over the top and gently press them into the yogurt.
    Place in the freezer while you melt the chocolate drizzle.

Chocolate Sauce Drizzle

  • Place chocolate chips, peanut butter and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle the chocolate sauce over the top of all of the ingredients with a spoon and then place the baking sheet into the freezer for at least 2 hours or until the yogurt has completely frozen.
    Remove the baking sheet from the freezer and gently cut or break the frozen yogurt bark into pieces and place them in a reezer-safe container or bag and store them in the freezer until served.
