Ingredients
1cupplain Greek-style yogurt
1/2cupcreamy peanut butter
1/4cupprotein or collagen peptides powder
1tablespoonhoney or maple syrup
1teaspoonvanilla extract
1/2cuppeanuts, roasted, salted
Chocolate Topping
1cupchocolate chips
1tablespooncoconut oil
Instructions
Line a 7 x 5-inch loaf pan with parchment paper or use a silicone bar mold. In a small bowl, combine the Greek yogurt, peanut butter, protein powder, honey and vanilla extract. Pour the mixture into the lined pan and top with roasted peanuts.Place in the freezer for at least 2 hours, or until firm.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted pour onto the yogurt layer top and return to the freezer for about 10 minutes, or until the chocolate has hardened.Remove from pan using the parchment paper handles and cut into 10-12 bars or pop out of molds to serve.Store any leftovers in an airtight container in the freezer.
