Chocolate Peppermint Protein Bark

Ingredients

Dark Chocolate Layer

  • 1 cup dark chocolate chips
  • 1 scoop chocolate protein powder
  • 1 tablespoon coconut oil
  • 1/4 teaspoon peppermint extract

White Chocolate Layer

  • 1 cup white chocolate chips
  • 1 scoop vanilla protein powder
  • 1 tablespoon coconut oil
  • 1/4 teaspoon peppermint extract

Topping

  • 2 tablespoons crushed candy canes or peppermint pieces

Instructions

Dark Chocolate Layer

  • Line a baking tray or loaf pan with parchment paper.
    Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Stir in the chocolate protein powder and peppermint extract until fully combined.
    Pour the dark chocolate mixture onto the prepared tray and spread evenly. Place in the freezer for10–15 minutes, or until just set.

White Chocolate Layer

  • Melt the white chocolate chips and coconut oil the same way. Stir in the vanilla protein powder and peppermint extract.
    Pour the white chocolate layer over the set dark chocolate layer and gently spread.
    Sprinkle crushed candy canes on top and lightly press them in.
    Freeze for at least 30 minutes, or until fully firm.
    Break into 10 pieces (more or less) and store in an airtight container in the freezer.
