Chocolate Peanut Cranberry Protein Clusters

These clusters are an easy protein-rich snack perfect for fixing your chocolate cravings. They are low in sugar, crunchy, and filling. Super easy and so delicious!

Ingredients

  • 1 1/2 cup chocolate chips
  • 1 cup peanuts, roasted, salted
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/2 cup dried cranberries
  • 1 scoop protein or collagen peptides powder
  • 1 tablespoon coconut oil
  • Sprinkles – optional

Instructions

  • Place parchment paper onto a tray and set aside.
    Set a heatproof bowl over a pan of barely simmering water. Add the peanut butter and chocolate chips and stir until melted and smooth.
    Add protein powder and coconut oil and stir until well combined.
    Add the peanuts and cranberries and stir to coat well.
    Drop by rounded spoonfuls onto the paper lined baking sheet and chill until firm, about 30 minutes. (You can make them as big or as small as you like. I made mine into 16 clusters.) Add sprinkles if desired.
     Store in fridge for up to1 week or freezer for up to 3 months.
