Ingredients
1cuppeanuts, roasted, salted
2/3cupchocolate chips
2tablespoonspeanut butter
1tablespooncoconut oil
1teaspoonvanilla extract
Instructions
Line a baking sheet or tray with parchment paper or use a silicon tray.Place chocolate chips and coconut oil in medium sized dish and microwave at 50% power with 30second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, stir in the peanut butter and add in the peanuts, stirring until well combined.Scoop out about tablespoon-size spoonfuls at a time onto the baking sheetMakes around 10-12 clusters, depending on your preferred size and allow to set in fridge. Once cool, store in an airtight container.Store leftovers in the refrigerator for up to about 7 days.
