Ingredients

Base Layer

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup natural peanut butter
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk of choice, as needed
  • Pinch of sea salt

Peanut Butter Layer

  • 1/2 cup natural creamy peanut butter
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon maple syrup, optional
  • Pinch of sea salt

Chocolate Topping

  • 3/4 cup dark chocolate chips or chopped dark chocolate
  • 1 tablespoon coconut oil

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Combine oats, almond flour, protein powder, peanut butter, maple syrup, vanilla and sea salt in a bowl.
    Mix until a soft, slightly sticky dough forms. Add milk a tablespoon at a time if needed.
    Press the mixture firmly and evenly into the prepared pan.

Peanut Butter Layer

  • Combine the peanut butter, melted coconut oil, maple syrup, and sea salt. Stir until completely smooth.
    Spread the peanut butter mixture evenly over the base.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour over the peanut butter layer and spread evenly.
    Refrigerate for 1–2 hours, or until completely firm.
    Slice into 8-10 bars or more smaller squares.
    Store in an airtight container in the refrigerator for up to 7 days. You can also freeze the bars for up to 2 months.
    Allow frozen bars to soften for a few minutes before serving.
