Chocolate Peanut Butter Protein Balls

Rich and fudgy, Chocolate Peanut Butter Protein Balls made with Greek yogurt, almond flour, cocoa, protein powder and creamy peanut butter, then dipped in melted chocolate. These easy no-bake treats are packed with protein and healthy fats and taste just like a healthier chocolate peanut butter truffle. 🥜🍫

Ingredients

  • 1 cup thick Greek yogurt
  • 1 cup almond flour
  • 1 scoop chocolate or vanilla protein powder
  • 1/4 cup natural peanut butter
  • 2 tablespoons cocoa powder
  • 2-3 tablespoons maple syrup, honey, or preferred sweetener
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Chocolate Coating

  • 1 cup dark or milk chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Chopped peanuts
  • Flaky sea salt
  • Cacao nibs
  • Shredded coconut
  • Freeze-dried raspberries
  • Peanut butter drizzle

Instructions

  • Add the Greek yogurt, almond flour, protein powder, cocoa powder, peanut butter, sweetener, vanilla and salt to a mixing bowl.
    Stir thoroughly until a thick, fudgy dough forms.
    If the mixture feels too soft, add another tablespoon of almond flour. If it feels too dry, add a small spoonful of yogurt.
    Refrigerate the mixture for 20–30 minutes to make it easier to handle.
    Roll the mixture into approximately 12–14 bite-sized balls.
    Place the balls on a baking paper-lined tray. 

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the balls and working quickly, using two forks, dip one ball at a time into the bowl of melted chocolate until it is fully coated. Lift the ball from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining balls.
    Return to the tray and immediately add your chosen toppings.
    Refrigerate for 20–30 minutes, or until the chocolate coating has set.
    Store in an airtight container in the fridge for up to 1 week. The protein balls can also be frozen for up to 2 months. Allow them to thaw for a few minutes before eating.
