Chocolate Orange Protein Snack Balls

Ingredients

  • 1 cup rolled oats
  • 1/2 cup chocolate or vanilla protein powder
  • 1/2 cup natural almond butter or peanut butter
  • 1/4 cup cocoa powder
  • 1/3 cup maple syrup or 6–8 soft dates
  • Zest of 1 large orange
  • 2-3 tablespoons fresh orange juice
  • 1 teaspoon vanilla extract
  • Pinch salt

Chocolate Topping

  • 3/4 cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

  • Add rolled oats to a food processor and pulse until they form a coarse flour.
    Add protein powder, cocoa powder, nut butter, sweetener, orange zest, vanilla, and salt.
    Pulse while adding orange juice one tablespoon at a time until the mixture is thick and sticky.
     Scoop tablespoon-sized portions and roll into balls.
     Chill for at least 20 minutes to firm up.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
     Once melted, dip all or half of each ball in it and top with zested orange peel.
    Sprinkle with sea salt if desired.
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
