Ingredients

Peanut Butter Base

  • 2 cups oat flour (oats blended to a flour)
  • 1 cup natural peanut butter (or almond or cashew butter)
  • 1/3 cup honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1 scoop vanilla or chocolate protein powder
  • 2 tablespoons ground flaxseed (optional)
  • 2-4 tablespoons milk of choice, as needed
  • Pinch of sea salt

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Chopped roasted peanuts
  • Flaky sea salt
  • Mini chocolate chips
  • Melted peanut butter drizzle
  • Cacao nibs

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a medium bowl, stir together the peanut butter, honey and vanilla until smooth.
    Add the oat flour, protein powder, flaxseed (if using) and sea salt.
    Mix until a soft dough forms, adding milk one tablespoon at a time if needed.
    Press the mixture firmly into the prepared pan. 

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, spread the chocolate evenly over the peanut butter layer.
    Sprinkle with chopped peanuts or flaky sea salt if desired.
    Refrigerate for 1–2 hours until fully set.
    Slice into 16 squares or 12 bars and enjoy.
    Store in an airtight container for up to 1 week or freezer for up to 3 months.
    Allow to soften for 5 minutes before serving.
