  • 1/2 cup peanut (or any nut or seed) butter
  • 1/2 cup chocolate chips
  • 1/4 cup coconut oil
  • 1/4 cup desiccated coconut
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup raisins or any dried fruits or nuts

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Place the peanut butter, honey, coconut oil in a medium saucepan and gently warm on a low heat until melted. Stir together as it melts. Once melted, add the chocolate chips and take off the heat. Continue to stir until melted.
Lastly add the coconut rolled oats, protein powder and vanilla and stir until all is fully coated in the chocolate mixture.
Scoop out into the lined pan and place in fridge to chill for an hour or so.
To serve, lift out of pan with parchment paper handles and cut into 16 or more smaller squares if desired.
Store in fridge for up to1 week or freezer for up to 3 months.
