Chocolate Mousse Protein Frosting

This creamy mousse is a light, protein-rich twist on traditional frosting.  It can be eaten as a dessert or snack or is perfect for topping cakes, cupcakes, and more! Its creamy, thick enough to spread and makes any healthy dessert even healthier.

Ingredients

  • 2 cups cottage cheese (full-fat or low-fat)
  • 1/4 cup protein or collagen peptides powder, plain, vanilla or chocolate
  • 1/4 cup cocoa powder
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk (dairy or non-dairy, adjust for consistency)

Optional Toppings

  • Dollop of whipped coconut cream – recipe below in notes
  • Fresh or freeze-dried fruit or berries
  • Chocolate shavings
  • Chopped nuts
  • Shredded coconut

Instructions

  • In a food processor, combine the cottage cheese, protein powder, honey, cocoa powder and vanilla extract. Blend until completely smooth and creamy, ensuring there are no lumps. This may take 1-2 minutes, depending on your food processor or blender.
    Add 1-2 tablespoons of milk to achieve the desired consistency. Blend again until fully incorporated. The mousse should be thick but silky smooth.
    Transfer the mousse into 2 serving glasses or bowls. Cover and refrigerate for at least 30 minutes to allow the flavors to develop and the texture to firm up.
    Before serving, add toppings of your choice. Serve immediately.
    Store any leftovers in the refrigerator for up to 4 days.
    Note: Cottage cheese frosting is generally a softer, spreadable consistency and will not harden like traditional buttercream made with butter and powdered sugar.
