Ingredients

Chocolate Layer

  • 1 cup coconut butter, store bought or homemade recipe below in notes
  • 1/3 cup almond butter or cashew butter
  • 1/4 cup cocoa powder
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract

Mint Swirl Layer

  • 1/2 cup coconut butter, store bought or homemade recipe below in notes
  • 1/4 cup vanilla protein powder
  • 2 tablespoons almond butter or cashew butter
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon peppermint extract
  • Few drops natural green food colouring or make your own – cook a small amount of greens (such as spinach) about a minute until tender, squeeze out water. Puree with a tiny bit of water to liquefy. You will get a very concentrated green.

Instructions

  • Line a loaf pan or small square container with parchment paper.
    In a microwave-safe bowl or saucepan, gently melt the coconut butter and almond butter for the chocolate layer until smooth.
    Stir in cocoa powder, protein powder, maple syrup and vanilla extract until creamy and fully combined.
    Pour about ¾ of the chocolate mixture into the prepared pan and smooth evenly.

Mint Layer

  • In a separate bowl, melt the coconut butter and almond butter.
    Stir in vanilla protein powder, maple syrup, peppermint extract, and optional coloring until smooth.
    Spoon the mint mixture over the chocolate layer. Add remaining chocolate mixture in small spoonfuls on top.
    Use a knife or skewer to gently swirl the layers together.
    Refrigerate for 2–3 hours, or until firm.
    Slice into 16 (more or less) squares and enjoy. 
    Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
