Chocolate Mint Protein Balls

Ingredients

  • 1 cup dates, (if dry,soak 10 minutes in warm water and drain)
  • 1/2 cup almond flour
  • 1/2 cup chocolate protein powder
  • 2 tablespoons cocoa or cacao powder
  • 2 tablespoons almond butter or cashew butter
  • 1 tablespoon coconut oil, melted
  • 1/2 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Optional Coating

  • Cocoa powder
  • Crushed cacao nibs
  • Dark chocolate drizzle
  • Finely shredded coconut 

Instructions

  • Add dates to a food processor and blend until a sticky paste forms.
    Add almond flour, protein powder, cocoa powder, nut butter, coconut oil, peppermint extract, vanilla, and salt.
    Process until a thick dough forms.
    If the mixture seems too dry, add 1 teaspoon water at a time.
    If too sticky, add a little extra almond flour.
    Scoop 12-14 tablespoon-sized portions and roll into balls.
    Roll in cocoa powder, coconut, or drizzle with melted dark chocolate if desired.
    Place in the fridge for 20–30 minutes to firm up.
    Store chilled and enjoy whenever a chocolate craving strikes.
    Refrigerate for up to 1 week or freeze for up to 3 months.
    Enjoy straight from the fridge for the best texture.

    Mix in dark chocolate chips before rolling.
