Ingredients
3/4cuppeanut butter
1/2cupnuts, chopped (almonds, cashews, walnuts)
1/4cupmaple syrup
2tablespoonscocoa powder
1/2cupprotein powder, chocolate
1teaspoonvanilla extract
Chocolate Topping
3/4cupchocolate chips
2teaspoonscoconut oil
Instructions
Line a 7 x 5-inch loaf pan with parchment paper. Set aside.In a medium mixing bowl, add peanut butter, chopped nuts, maple syrup, cocoa powder, protein powder and vanilla extract. Stir with a rubber spatula until it forms a dough that comes into a ball. It shouldn't be dry or too sticky. If too dry, add 1 tablespoon of milk and stir it in. If too wet,add more protein powder to firm it up.Press the dough into an even layer into the prepared loaf pan. Set aside while you melt the chocolate topping,
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, pour on top of the bar and tilt the pan to spread it evenly or spread it out with the back of a spoon.Sprinkle with flaky salt if desired and place in freezer for 5 minutes for chocolate to set.Top with flaky salt and cut into 8 bars or more smaller squares.Store for up to 1 week in fridge or up to 3 months in freezer.
