Chocolate Fudge Protein Logs

Ingredients

  • 1 1/4 cups plain thick Greek-style yogurt
  • 1/2 cup peanut butter
  • 1/3 cup cocoa powder
  • 1/3 cup vanilla or chocolate protein powder
  • 1/4 cup honey or maple syrup
  • 2 tablespoons powdered peanut butter (PB2 or similar)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Toppings Optional

  • Melted dark chocolate
  • Chopped peanuts
  • Cocoa nibs

Instructions

  • In a medium bowl, whisk the Greek yogurt and peanut butter until smooth.
    Add cocoa powder,protein powder, powdered peanut butter, honey or maple syrup, vanilla, and sea salt.
    Mix until thick, smooth, and fully combined. The mixture should resemble soft fudge.
    Spoon onto baking paper and shape into a square shape or a log using a spatula.
    Add toppings if desired.
    Wrap tightly and freeze for 2–3 hours, or until firm.
    Slice into 10-12 bars or more smaller squares and enjoy straight from the freezer or after a 1–2 minute thaw.
