Ingredients
1 1/4cupsplain thick Greek-style yogurt
1/2cuppeanut butter
1/3cupcocoa powder
1/3cupvanilla or chocolate protein powder
1/4cuphoney or maple syrup
2tablespoonspowdered peanut butter (PB2 or similar)
1teaspoonvanilla extract
Pinch of sea salt
Toppings Optional
Melted dark chocolate
Chopped peanuts
Cocoa nibs
Instructions
In a medium bowl, whisk the Greek yogurt and peanut butter until smooth.Add cocoa powder,protein powder, powdered peanut butter, honey or maple syrup, vanilla, and sea salt.Mix until thick, smooth, and fully combined. The mixture should resemble soft fudge.Spoon onto baking paper and shape into a square shape or a log using a spatula.Add toppings if desired.Wrap tightly and freeze for 2–3 hours, or until firm.Slice into 10-12 bars or more smaller squares and enjoy straight from the freezer or after a 1–2 minute thaw.
