Ingredients

Chocolate Yoghurt Centre

  • 1 cup thick Greek yoghurt
  • 1/4 cup chocolate or vanilla protein powder
  • 2 tablespoons cocoa powder
  • 1-2 tablespoons maple syrup or honey, to taste
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips or finely chopped dark chocolate

Chocolate Coating

  • 1 cup dark or milk chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil

Instructions

Chocolate Yoghurt Centre

  • Add the Greek yoghurt, protein powder, cocoa powder, maple syrup and vanilla extract to a bowl. Stir until smooth and thick. If the mixture seems too soft, add a little extra protein powder.
Fold the mini chocolate chips or chopped dark chocolate through the mixture.
Line a small tray with baking paper. Spoon the mixture into eight small mounds or silicone moulds, shaping them into rounded bites. Keep them small enough to coat easily.
Place the tray in the freezer for 2–3 hours, or until the centres are firm enough to handle.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Allow the chocolate to cool slightly.
Remove the frozen centres from the tray. Dip each one into the melted chocolate, allowing excess coating to drip off. Place them back on the lined tray.
Return the bites to the freezer until the chocolate coating is firm. Let them sit at room temperature for a few minutes before eating for a creamier centre.
    Notes:
Protein powder: Different brands absorb liquid differently. If your mixture is too soft to shape, add a little more protein powder.
Sweetness: Adjust the maple syrup or honey to suit your taste and the sweetness of your protein powder.
Storage: Store in an airtight container in the freezer for up to one month for best quality.
Serving: Allow the bites to soften slightly before eating. The centres will be firm straight from the freezer.
Dairy-free option: Use a thick plant-based yoghurt, a suitable plant-based protein powder and dairy-free chocolate. The texture may vary depending on the products used.
