Chocolate Dipped Frozen Yogurt Popsicles

You can make healthy high-protein yogurt popsicles at home using just a few simple, clean ingredients
I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention. One of them that is making a huge buzz is around what is called Frozen Yogurt Popsicles.

Ingredients

  • 1 cup Greek yogurt
  • 1/4 cup peanut (or any other nut) butter
  • 1-2 tablespoons honey or maple syrup
  • 1 scoop protein or collagen powder
  • 1/2 cup peanuts, roasted

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 6 Popsicle sticks

Instructions

  • Line a baking sheet with parchment paper.
    In a mixing bowl, add yogurt, peanut butter and honey and mix together until smooth and well combined.
    Place yogurt mixture by the spoonful in 6 round shapes onto the baking sheet.
    Just divide the mixture up into the 6 blobs. Using the back of the spoon, shape each dollop into a round, circular shape.
    Sprinkle chopped peanuts on top of each round of yogurt. Place popsicle stick firmly in the center of each yogurt round, laying it flat and being sure to cover the tips of the popsicle sticks with yogurt.
    Place in the freezer to harden for at least 1 hour.
     

Chocolate Coating

  • Place the chocolate chips and coconut oil to a microwave-safe bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and coconut oil together.
    Remove the yogurt pops from freezer and from the parchment paper and dip each one into the melted chocolate, using a spoon to ensure they are evenly covered.
    Place back on parchment paper and in the freezer to harden again - optional: add flaky salt, sprinkles, or more chopped nuts on top of chocolate.
    Once the chocolate shell has hardened, remove the popsicles from the freezer and enjoy (I like to let them sit out for 5-10 minutes before eating so the yogurt filling is soft).
