Ingredients
Base Dough
1 1/3cupsoat flour (oats blended to a flour)
1/3cupalmond flour
1/3cupcashew butter
3tablespoonshoney or maple syrup
5tablespoonsalmond milk or any milk
1teaspoonvanilla extract
Chocolate Date Filling
1cupdates, soaked 30 minutes and drained
1/3cupalmond milk or any milk
3tablespoonsalmond butter
3tablespoonscocoa powder
1teaspoonvanilla extract
Instructions
Base Dough
Add all dough ingredients to a food processor and blend until a thick dough forms.Scoop the dough out onto a sheet of parchment paper. Then place another sheet on top and roll out the dough into a large rectangle around 1/3 inch thick.This enables a seamless process to roll out the dough without the dough sticking to the counter or the rolling pin.If the edges of the rectangle are a bit uneven you can trim them up to create a more uniform shape. Add the leftover dough from trimming back to the rectangle.Place in fridge while you make the date chocolate filling.
Chocolate Date Filling
Add the chocolate date mixture ingredients to a food processor and blend until a sticky paste forms.Then, add the chocolate date mixture on top of the base dough rectangle and gently spread it out because the mixture is sticky. Roll up carefully and place the roll in the freezer for 30-45 minutes.Then, cut into 8-10 slices to serve! You can store in the freezer and just thaw/warm up before eating.
