Chocolate Date Roll

This no-bake, wholesome chocolate filled log is the perfect snack or dessert that everyone will love. The dough is delicious, made from almond and coconut flour. The filling is smooth, creamy, and naturally sweet from dates.

Ingredients

Base Dough

  • 1 1/3 cups oat flour (oats blended to a flour)
  • 1/3 cup almond flour
  • 1/3 cup cashew butter
  • 3 tablespoons honey or maple syrup
  • 5 tablespoons almond milk or any milk
  • 1 teaspoon vanilla extract

Chocolate Date Filling

  • 1 cup dates, soaked 30 minutes and drained
  • 1/3 cup almond milk or any milk
  • 3 tablespoons almond butter
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Instructions

Base Dough

  • Add all dough ingredients to a food processor and blend until a thick dough forms.
    Scoop the dough out onto a sheet of parchment paper. Then place another sheet on top and roll out the dough into a large rectangle around 1/3 inch thick.
    This enables a seamless process to roll out the dough without the dough sticking to the counter or the rolling pin.
    If the edges of the rectangle are a bit uneven you can trim them up to create a more uniform shape. Add the leftover dough from trimming back to the rectangle.
    Place in fridge while you make the date chocolate filling.

Chocolate Date Filling

  • Add the chocolate date mixture ingredients to a food processor and blend until a sticky paste forms.
    Then, add the chocolate date mixture on top of the base dough rectangle and gently spread it out because the mixture is sticky. Roll up carefully and place the roll in the freezer for 30-45 minutes.
    Then, cut into 8-10 slices to serve! You can store in the freezer and just thaw/warm up before eating.
