Chocolate Cranberry Ginger Protein Bark

You only need 7 ingredients to make this incredible Chocolate Cranberry Ginger Protein Bark. It’s quick, easy and can be made with both semi-sweet and bittersweet chocolate for the perfect balance of sweetness, texture and creaminess!

Ingredients

  • 1 cup chocolate, finely chopped (the darker, the better)
  • 1/3 cup cashew (or any other nut or seed) butter
  • 1/2 cup candied ginger, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup macadamia nuts, chopped
  • 1/4 cup protein or collagen peptides powder
  • 1 tablespoon coconut oil
  • Flaky salt, optional 

Instructions

  • Place chocolate chips and coconut oil in medium dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once chocolate is smooth, add cashew butter, and stir again until creamy. Remove from heat and stir in the protein powder.
    Line a baking sheet with a silicone baking mat or parchment paper and spread the chocolate mixture out to approximately 8 ½ x 11 inches.
    While chocolate is still warm sprinkle chopped ginger, cranberries and macadamia nuts over the top. Add a pinch or two of flaky salt over the top, if desired.
    Allow it to cool uncovered, at room temperature for several hours until firm enough to break into pieces. Break into about 12 or more pieces.
    Store in an airtight container or resealable bag in the fridge where it will last several weeks.
