Ingredients

  • 1 cup desiccated coconut
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup almond butter, cashew butter, or peanut butter
  • 2 tablespoons cocoa or cacao powder
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Add-Ins

  • Mini dark chocolate chips
  • Cacao nibs
  • Chopped almonds
  • Extra shredded coconut

Instructions

  • In a mixing bowl, combine shredded coconut, protein powder, cocoa powder, chia seeds, and sea salt.
    Add nut butter, maple syrup, melted coconut oil, and vanilla.
    Mix thoroughly until a thick, sticky mixture forms.
    Allow the mixture to sit for 5–10 minutes so the chia seeds can absorb some moisture.
    Using a small cookie scoop or spoon, drop around 10-12 small portions onto a parchment-lined tray.
    Alternatively, roll into balls and gently flatten. Or you can make these in muffin cups.
    Place in the refrigerator for 30 minutes or freezer for 15 minutes until firm.
    Store chilled and enjoy whenever you need a nourishing chocolate fix.
    Refrigerate for up to 1 week or freeze for up to 3 months.
