Ingredients
1cupGreek-style yogurt, plain or vanilla
1cupfresh cherries, pitted and chopped
1/4cupchocolate chips
2scoopsprotein or collagen powder
1tablespoonhoney or maple syrup
1teaspoonvanilla extract
Chocolate Coating
1/2cupchocolate chips
1teaspooncoconut oil
Instructions
Line a baking sheet or small tray with parchment paper and set aside.In a bowl, combine yogurt, chopped cherries, chocolate chips, protein powder, honey and vanilla until well combined.Spoon 6 portions of the mixture onto the lined tray. Freeze for at least one hour.Once the cherries and yogurt have frozen, melt the chocolate chips.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted use two forks to hold each yogurt bite and one by one, dip into the melted chocolate, then place back on the parchment lined tray.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Freeze for about 10-15 minutes until the chocolate sets. Store in the freezer for up to 8 weeks.
