Ingredients

  • 1 cup cashew, almond or peanut butter
  • 1/2 cup vanilla or chocolate protein powder
  • 1/3 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Chocolate Drizzle

  • 1/4 cup dark, milk or white chocolate chips
  • 1 teaspoon coconut oil

Optional Add-Ins Or Toppings

  • 1/2 cup chopped nuts
  • 1/4 cup shredded coconut
  • 1/4 cup dark chocolate chips

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a mixing bowl, combine the nut butter, maple syrup, melted coconut oil, and vanilla extract. Stir until smooth.
    Add the protein powder, cocoa powder, and sea salt. Mix until a thick, smooth fudge mixture forms.
    Fold in any optional add-ins if using.
    Press the mixture into the prepared pan and smooth the top.

Chocolate Drizzle

  • You can use one colour chocolate drizzle or 2 like I have done which you can see in the image.
    Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Slice the fudge into 20 (more or less) squares and drizzle over the melted chocolate. Place in the fridge for 1–2 hours or freeze for about 45 minutes until firm.
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
