If you wish to make your own natural green food colouring - cook tender, greens (such as spinach) in a tiny bit of water for about a minute then drain. Puree the greens with just enough water to liquefy them, you will get a very concentrated green.If you wish to increase the flavour of your bark, toast your nuts and coconut first. To do this, preheat your oven to 350°F place the nuts in a small tray or dish and the coconut on another small dish and bake 7 to 8 minutes, until lightly toasted and fragrant. The coconut will brown quickly so keep an eye on it.You can then chop the nuts by hand with a knife on a chopping board or put them in the food processor and blitz them.If you choose to blitz them, be careful not to over process as its nice to have some different sized ‘bits’ in your bark. I like to do mine by hand with a knife and can control how many big bits I chop or how many small pieces and aim for a mix.Line a 8x 8-inch square baking pan with parchment paper or foil; set aside. Place chocolate chips and coconut oil in medium sized dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Stir in food coloring if desired. Stir in the coconut, almonds, protein powder and lime zest. Spread into prepared pan. Chill until firm, 10-15 minutes.Break into small pieces. Store in an airtight container at room temperature.
