Chocolate Almond Coconut Protein Bars

Ditch the store bought and go for one of these Chocolate Almond Coconut Protein Bars instead. Made with whole food ingredients, natural sugars, and complete protein, these Coconut Almond Protein Bars are ready in under 30 minutes (without a food processor!) These healthy, no-bake protein bars will become your new favorite snack.

Ingredients

  • 1/2 cup protein powder, chocolate
  • 1/2 cup almond milk
  • 1/4 cup coconut flour
  • 2 tablespoons almond butter
  • 2 tablespoons desiccated coconut (+ a bit extra for sprinkling)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract

Chocolate Drizzle Topping

  • 1/4 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • 12 almonds

Instructions

  • In a medium bowl, add protein powder, coconut flour, almond butter, almond milk, coconut, honey, cocoa and vanilla extract.
    Mix well with your hands, and form 4 bars. The mixture should not be crumbly, and should hold together well. If it's too crumbly, add a small amount of almond milk until the right consistency is reached and you can form a solid bar.
    Add 3 almonds on top of each bar, place on a baking sheet, and put in the freezer.  

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bars from the freezer, and drizzle the chocolate evenly on top of the 4 bars. Sprinkle each bar with a bit more coconut, and place back into the freezer until firm, about 30 minutes.
    Remove from freezer, and wrap each one in cellophane or store in an airtight container. Keep refrigerated.
