1 1/2cupsthick Greek yogurt
1cupfresh or frozen pitted cherries
1/2cupdesiccated coconut
1scoopvanilla protein powder
1tablespoonmaple syrup or honey, optional
1teaspoonvanilla extract
Pinch of sea salt

Instructions
Puree the cherries in a food processor.Place the Greek yogurt, protein powder, vanilla, maple syrup or honey if using, and sea salt into a bowl.Stir until smooth and creamy.In a 12 muffin tin (preferably silicone) or a chocolate or bar mold, alternate between a layer of the yogurt mixture followed by a layer of cherries to make a beautiful swirl. Repeat until the muffin tins are filled.Sprinkle with extra coconut or your chosen toppings.Freeze for 2β3 hours, or until completely firm.Remove from the molds and transfer to an airtight freezer container.Allow to sit for 2β3 minutes before eating for a softer, creamier texture.Store in an airtight container in the freezer for up to 2 months.Recipe TipsFor an especially beautiful presentation, reserve a few small pieces of cherry and press them into the top of each bite before freezing. A sprinkle of coconut makes them look even more inviting.Note: If you canβt get your hands on fresh cherries, you can also use canned cherries or replace them with any other stone fruit like apricots, plums, nectarines or blackberries.
