Cashew Date Protein Bars

Ingredients

Cashew Protein Base

  • 1 cup cashews, soaked 3+hours and drained
  • 1 cup soft dates, (if hard soak 30 minutes and drain)
  • 1 scoop vanilla or unflavoured protein powder
  • 2 tablespoons cashew, almond or peanut butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1-2 tablespoons almond milk (if needed)
  • 2 tablespoons hemp hearts (seeds) (or chopped nuts or other seeds)

Chocolate Topping

  • 3/4 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon bar mold. 

Cashew Protein Base

  • Add cashews to a food processor and blend until finely ground. Add dates and process until sticky and combined.
    Add protein powder, nut butter, vanilla, and salt. Blend until a thick, fudgy dough forms. Add almond milk if needed to help it come together.
    Press the mixture firmly into the lined pan, smoothing evenly.
    Sprinkle with hemp hearts, then press with your fingers to stick them to the mixture.
    Freeze for atleast one hour.  

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bars from the freezer, cut into 8-10 bars or more smaller squares or pop out of mold.
    Dip each bar halfway (or more) into the melted chocolate (it will freeze instantly).
    Serve immediately or keep in the fridge for up to 1 week or freeze for up to 2 months. Best enjoyed chilled for that perfect fudgy texture.
