Ingredients
1cupGreek-style yogurt, plain or vanilla
1/2cupcashew (or other nut or seed) butter
1/2cupblueberries, fresh or frozen
1/2cupcoconut shreds
1scoopprotein or collagen powder
1/4cuphoney or maple syrup
1teaspoonvanilla extract
Instructions
Add the yogurt, cashew butter, protein powder, honey and vanilla extract to a small bowl or dish and mix until smooth and creamy. Pour the mixture onto a tray lined with parchment paper or a silicon baking mat and spread it out into a layer ¼- ½ inch thick. Top the yogurt layer with blueberries and coconut shreds and gently press into the mixture so they hold tight when you are eating it. Place in the freezer for at least 2-3 hours, or until completely set. Once frozen, remove the bark from the freezer, break it into bite sized pieces to serve.Return any uneaten bark to store in the freezer.
