Cashew Blueberry Coconut Frozen Yogurt Bark

When your sweet tooth strikes, this frozen yogurt bark is going to be your best friend! A snack made in minutes that combines yogurt with fruit and other healthy toppings to make a convenient quick bite.

Ingredients

  • 1 cup Greek-style yogurt, plain or vanilla
  • 1/2 cup cashew (or other nut or seed) butter
  • 1/2 cup blueberries, fresh or frozen
  • 1/2 cup coconut shreds
  • 1 scoop protein or collagen powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Add the yogurt, cashew butter, protein powder, honey and vanilla extract to a small bowl or dish and mix until smooth and creamy. Pour the mixture onto a tray lined with parchment paper or a silicon baking mat and spread it out into a layer ¼- ½ inch thick.
    Top the yogurt layer with blueberries and coconut shreds and gently press into the mixture so they hold tight when you are eating it. Place in the freezer for at least 2-3 hours, or until completely set. 
    Once frozen, remove the bark from the freezer, break it into bite sized pieces to serve.
    Return any uneaten bark to store in the freezer.
