Ingredients
1cupalmonds, or walnuts or a mix of your choice of nuts
1cupcarrots, grated (about 2 large carrots)
1 cupdates, soaked at least 30 minutes and drained
1/2cupdesiccated coconut
1/4cupcoconut oil, melted
1orange, juice and zest
1teaspooncinnamon
Desiccated coconut for rolling (optional)
Instructions
Place almonds and coconut into a food processer and process until broken down and crumbly. Add dates, carrots, coconut oil, cinnamon, orange juice and zest and continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture and different sized “bits” in your energy bites.Scoop 1½ tablespoon (ish) sized pieces of the dough and roll into 16 (give or take a few) and roll in the optional coconut.Store in an airtight container in fridge for up to 2weeks.
